Hi Janique,
When you have completed translating the segment and you want to add the translation to the TM as a new TU, instead of Ctrl+Enter to confirm the segment, use Ctrl+Shift+U.
Take a look at File - Option - Keyboard shortcuts - Editor > TM Window.

How do I stop it from adding translations instead of overwriting when I press Ctrl+Enter? And where is the option when I create a new translation memory to specify if multiple translations for the same source segment should be allowed or not? Like it used to be in Trados.
