I don't believe you can control this with segmentation.  You are showing the field values and these are separate entries.  I created an example with default rules:

Note that the colon doesn't segment the text where it is text, only the fields are segmented and these are like this:

Word treats this colon as a field separator under these conditions.

It seems that we cannot control this when such a text exists in field entries.

As I said, Word treats these as two separate fields, they are not intended to be joined together.  Studio treats them the same way, as two separate fields.  They are only visible in Word when you display the codes.
