Whenever I return to the Projects view, the Notifications pane opens. Moreover, I need to click the x twice in order to close it. This is quite irritating. Does anyone know why, or how to get rid of it?

Have you tried putting your mouse over the Notifications tab (with the bell) on the right edge of the Studio window and then clicking the "x" at the upper right of the window to get rid of both the window **AND** the little tab?
I closed all 3 of the little window tabs along the right edge of the Studio window this way (Notifications, Preview, Advanced Display Filter), because I accidentally opened them too often. Why they are even there is beyond me, as I could easily open them from the View ribbon if I wanted to.
And there is another irritating window that bothers me over and over, like your Notifications window.
I undocked the Messages window and put it on another display. Now it opens when I go to Editor view and blocks whatever I am viewing on the other display -- even though I repeatedly close it.
I also turned off fragment matching long ago. If I recall correctly, the cursor used to jump to the Fragment Match window -- and I had to use the mouse to get it out again.
I hope someone finds a workaround for you, because I doubt SDL is ever going to fix any of these little irritations. They have too many serious bugs to deal with.

Yes, I tried that (the first thing I did) but it did not help.
However, strangely, it seems to help if I selec View > Reset window layout (even though I did not change it). I say "seems" because the result of this action varies -- sometimes the Notification pane stops appearing, sometimes it appears in another view. But selecting Reset window layout again (and perhaps again...) may very well get rid of this behaviour completely. Until, of course, the next time I start Studio... :-)
Maybe this simple action will help with (some of) your problems, too.
