How can I make Studio update lists according to the target language? for example making a list in the format (a)...(z) into (א)...(ת) in the target file. This refers to lists that are identified as lists by Studio and therefore do not appear in the work file at all but inserted automatically after completion.

You can't. Studio moves them to structure as the format of these features are controlled by the source application.
